Red Bean Chilli Soup
Serves 8
Dried red kidney beans are a great way to stretch your rand. Plan ahead to allow soaking time for the dried beans. If you prefer to use canned beans you'll need about 4 ½ cups, or 3 cans.
Ingredients
1 ½ cups dried kidney beans
1 large yellow onion
2 medium carrots, chopped (about 1 cup)
1 large green bell pepper, cored, seeded and chopped
3 large cloves garlic, finely chopped
1 ½ tablespoons chili powder (Optional)
1 can diced tomatoes
¼ teaspoon sea salt
